JARRETE
It is an area full of tendons but very juicy and tasty. Its flavour is intense, with perfectly balanced bitter-sweet flavour. Ideal to consume in small cubes.
BABILLA
It is the most cured and the narrowest part, with a persistent flavour, with hazelnut notes and a higher salt content.
MAZA
It is the widest part of the ham and, therefore, the one with the most meat. Considered the most succulent and tender and the juiciest for its high fat marbling.
PUNTA OR CADENA
Long and smooth taste thanks to its high fat marbling.
